I found this recipe for Spanish Rice about a year and a half ago. I was looking for something to round out a meal and found this gem. It's super easy and very tasty!
Ingredients:
- 1 15 oz can diced tomatoes
- 1 1/2 cups chicken stock (I added chicken bouillon to water)
- 1 1/4 cups uncooked rice
- 1 tbs butter
- 1 1/2 tsp chili powder
- 1 1/2 tsp cumin
- 1 tsp oregano
- 1 tsp onion powder
- 1/2 tsp garlic powder
Directions:
- Mix all ingredients in a large saucepan.
- Bring to a boil.
- Once boiling, turn temperature down to low and cover.
- Cook for 20 minutes (no mixing after the lid is on).
I've made this several times and have served it as a side with soft tacos and carnitas!
