A Gluten Free 2017

I was diagnosed with a gluten sensitivity back in January. I tried to fight it for a few months, but the discomfort was no longer worth eating foods made with gluten. I have to be mindful of what I eat and learned to read ingredients on the back of packages. Scott gave me a GF cookbook for my birthday to help me ease into this new lifestyle. I miss a good sandwich & pizza from time to time (still trying to find a satisfying GF bread) but overall those cravings aren't as hard to resist anymore.  


This became a GF pasta carbonara.

Carnitas and Spanish rice. Always a crowd pleaser.

Greg made some yummy food once again for Memorial Day.

We received a spiralizer as a wedding gift and thought it did a great job with zucchini! I served this with pesto and shrimp.

This became a sausage & asparagus cream sauce over GF noodles.

We found these GF rolls made of tapioca flour & yucca root. We sliced kielbasa and made mini sliders. 

This dish consists of chicken, beef, shrimp & cactus. Always makes my mouth happy when I get it! Corn tortillas are now my go to when we get Mexican food.

I've learned that GF eating is not a death sentence, as there is still plenty of tasty food to eat.
